- These are the dried goji berries. You can also use them dried in desserts. I used these for this simmered dish.
- Season the chicken drumsticks with the dried herbs, salt, and pepper. Marjoram helps with digestion.
- Cut the onion into 5mm slices. Wash and tear apart the maitake. Chop the tomatoes. You can leave the skin on or peel, whichever you prefer.
- Heat olive oil in an enamel pot. Add the chicken drumsticks and cook lightly. When the chicken begins to lightly change color, add the water.
- Cover with a lid and leave it until it begins to boil. Once it begins to boil, drop the heat to low.
- Add, in order, the tomato, maitake mushrooms, and goji berries. Cover with a lid and simmer for 15-20 minutes.
- Season with salt, pepper, and soy sauce. Stop the heat and let it steam for a short time to finish.
- Garnish with digestion aiding and mineral filled parsley and then enjoy. The chicken will become so tender and delicious. You can also enjoy the goji berries.
